Stephen Meenk, a 38‑year‑old respiratory therapist who has spent more than a decade working in intensive‑care units at St. Luke’s Medical Center, is preparing to trade his scrubs for pizza peels. The longtime hobby baker announced plans to open Meenk Bros Pizza Co. at 8415 W. Burleigh Street, a compact storefront that will focus on New York‑style pies made with cold‑fermented dough and specialty toppings.
